Every so often, we like to prepare meals with Beyond Meat.  I know it’s not for everyone and some aren’t willing to try it but if you are curious, I highly recommend eating it at least once.  Our latest creation is a Beyond Meat Patty Melt.  It was amazing! Beyond Meat has a similar texture to ground meat but I think it’s a bit moister and juicier.  I also think it has a slightly nutty flavor.  In this case you will know you aren’t eating meat but if you are making other dishes, Tacos or Sloppy Joe’s for example, you won’t taste a difference after adding all the spices and sauces.  The “patty” in this recipe is seasoned Beyond Meat.  You will get the full texture and taste of the product.  Personally, I think it’s great.  Andrew even liked it! The weather has been so weird lately; it is still winter?  Did spring come early?  Who knows!  But winter is a time for chili so regardless of the outside temps, I was going to make chili.  I ended up with a Chili Cornbread Skillet.  It might look and sound complicated but it’s actually quite easy to make and doesn’t need to cook in a slow cooker all day.  It a delicious comfort food that packs a little heat (but isn’t too spicy) and has great texture.  There is a good ratio of meat to beans to tomatoes in each bite too, with neither ingredient overpowering another.  And the cornbread topping is a nice addition if I do say so myself.  It’s hefty and makes the dish extra savory since the cornbread is part of the dish vs being served on the side. Gnocchi is one of my favorite pastas to cook with.  It’s so soft and pillowy once boiled and pairs well with so many sauces.  I recently make a Gnocchi Bolognese that was out of this world (or so I’m told)!  As a non-beef eater, I must experiment with recipes and hope for the best.  And usually ask for feedback so I know how the recipe turned out.  I was told “it’s really good” and then after a few bites received a much better description… “rich, flavorful meat in each bite and the gnocchi melts in your mouth”.  Which seemed like a better way to explain it to you all 😊 It’s the perfect recipe for a cold winter night but to be honest, I think it can be enjoyed year-round.  This recipe fills you up without leaving you feeling too full or stuffed when done.  The Bolognese sauce is light and not filling but paired with the gnocchi, which … Continue reading

I love all things Buffalo Chicken.  If you can “buffalo chicken” a recipe, I’ve probably done it, and if I haven’t, I want to know what I’m missing.  My new favorite recipe is for Buffalo Chicken Lasagna.  It’s loaded with buffalo wing sauce, tender rotisserie chicken, plenty of cheese, and soft noodles.  It’s got some heat but isn’t too spicy in my opinion.  If it is too spicy for you, cut the heat with some blue cheese or ranch dressing.  It’s an easy recipe to prepare and comes together, start to finish, in about 1 hour. Enchilada Meatballs are my new favorite creation 😊 They taste just like the real thing and have amazing Tex-Mex flavor.  They are tender, juicy meatballs made from ground beef, ground turkey, or ground chicken (you pick), topped with a mild enchilada sauce, beans, corn, and plenty of melted cheese.  Super yummy and super customizable. Start by preheating the oven to 375 degrees F, then prepare all ingredients: mince the garlic, chop the cilantro, onion, and jalapeno, drain, and rinse the black beans, and drain the corn.  Set all aside until ready to use. Chicken Bacon Ranch Noodle Soup is an elevated version of Chicken Noodle Soup.  It’s like Chicken Noodle Soup on steroids 😊 I’m all for anything chicken, bacon, ranch flavored and this soup does not disappoint.  It’s packed with soft noodles, tender chicken, perfectly seasoned ranch broth, and the toppings bring it to a whole new level.  It’s great for a cold winter night or when you are looking for a quick and easy weeknight meal because it doesn’t take long to prepare.  Personally, I’ll be eating this soup year-round.  It’s hearty without being filling, warms you up, is customizable, and makes great leftovers. Philly Cheesesteak Pasta is a great one-pot weeknight meal the whole family will love!  It tastes just like a Philly Cheesesteak sandwich and if you aren’t familiar, it’s thin sliced beef with sautéed onions and peppers on a hoagie that’s smothered with cheese.  In this case, the bun is being replaced by noodles.  It’s cheesy, melty, and the perfect comfort food. The recipe can be found here. Start by preheating the oven to 400 degrees F and prepare your ingredients – slice the onion and bell pepper and mince the garlic. Lettuce wraps are something I like to make when I want an easy meal, a delicious meal, a nutritious meal, and something light.  Life gets in the way, and you get busy, or you have a long day at work and don’t want to spend a lot of time in the kitchen.  That’s where these lettuce wraps come in!  They are fast to make and taste great – and you only need about 15 minutes to prepare them.  The meat is a lovely combination of sweet and savory, the lettuce adds a nice crunch to each bite and the rice balances everything out.  From what I understand, Korean beef is typically a thin sliced steak, but I’m opting for ground beef (and ground chicken).  It’s cheaper and almost everyone knows how to prepare it so anyone can whip up this meal 😊 I do have 2 variations of the same recipe, one with beef and one with … Continue reading

Chicken Meatballs with Homemade Spinach Alfredo Sauce is a hearty and rich meal your whole family will love!  The homemade sauce is deliciously creamy and is paired with crispy, salty bacon, tender, cooked spinach, and flavorful chicken meatballs.  The chicken absorbs some of the sauce and flavors while simmering making them super moist.  It’s a savory dish you won’t want to miss out on trying!
