Open Faced BBQ Chicken Sandwich are a great addition to any weekly menu!  Simple to prepare, hearty, and comforting on a cold night.  These open-faced sandwiches are very flavorful; crispy toast, melted cheese, BBQ rotisserie chicken that’s piled high, what’s not to love?  They are yummy and come together in about 20 minutes (including prep and cook time). The recipe can be found here. Start by removing the rotisserie chicken from the bone.  Shred it and set aside.  You will only need about ½ the rotisserie chicken for this recipe.  The recipe makes enough for 4 open-faced sandwiches.  If you need more than 4, adjust the ingredients accordingly.  Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. The 4th of July is right around the corner and as things seem to be returning to normal, I’m sure a lot of people are planning a gathering with friends and family to celebrate.  I know we sure are!  The weather is predicted to be beautiful and sunny, and we haven’t entertained in a while, so we are really looking forward to the holiday. Are you ever hosting a party or having a few guests over for dinner but don’t know what to serve?  I always struggle with what to cook because I want my guests to enjoy the meal but also want time to socialize and not be stuck in the kitchen.  Pulled chicken or pulled pork is always a good option.  You can prepare it in the slow cooker so it’s no fuss, it feeds a crowd, and is great to serve for a build-your-own-sandwich bar.  Or you can make it for yourself to enjoy for meals through the week or to freeze for later. We recently tried Beyond Meat Plant-Based Ground Beyond Beef in Sloppy Joe format and let me tell you, it was delicious!  I think Sloppy Joe’s transport you back to your childhood where you ate dinner around the family table.  It was a classic meal and a staple in a lot of homes growing up.  However, tastes have changed for some people and others follow a plant-based diet, so a traditional Sloppy Joe just won’t cut it anymore.  That’s where Beyond Meat comes in! Not too long ago, I wrote a blog called Creative Cauliflower Meals about various ways to use cauliflower in Chinese inspired recipes.  We’ve been talking about those recipes ever since and thought, why not try a few more? There are SO MANY ways to utilize cauliflower in recipes.  My most preferred way is to substitute chicken with cauliflower.  Once it’s cooked/baked, it has a very similar texture so you can hardly tell you aren’t eating meat.  This is a great way to expand your pallet if you are vegetarian or exploring a vegan diet. Have you ever heard of Jackfruit?  If not, let me fill you in.  It is a meatless alternative (it’s actually fruit) that closely resembles pulled pork.  It’s great for vegans, vegetarians, or anyone looking for a little variety.  I was skeptical at first but it’s quite good.  I like to buy canned jackfruit because it’s pre-sliced and easy to work with – all you have to do is cook it and shred it! I want to share my recipe for BBQ Pulled Jackfruit Sandwiches.  It’s real deal shredded BBQ, loaded with BBQ flavor, but is a plant-based recipe.  It’s a little sweet and savory but looks and tastes like pulled pork. Summer is finally here and now it’s time to look ahead to the 4th of July.  Can you believe it’s only a week away?  We plan on celebrating with family and friends – backyard bash, BBQ, yard games, drinks, the whole shebang!  If you are as unprepared as I am, you are probably in need of a few quick and easy food options 🙂 First up is Buffalo Chicken Firecrackers.  These are fun to assemble and a great themed food for your spread.  Feel free to use your favorite homemade Buffalo Chicken Dip if you prefer but I like to order fresh from the deli.  Saves me some time and effort, and it’s delicious!  Plus, any leftovers can be set out to enjoy with the rest of the food. One thing I’ve always been curious to try is a Juicy Lucy. I’ve never had the opportunity because I don’t eat red meat so I decided to create my own version using ground chicken. It took some tweaking to get the texture and size of the patty right but the result was yummy! The recipe can be found here. I didn’t want to use plain ground chicken without any seasoning because the burger wouldn’t have much flavor then. I followed the seasoning recipe from the Buffalo Chicken Penne recipe. I use this seasoning mix all the time at home. It’s great on a grilled chicken breast or veggies because it adds a salty flavor with a bit of spice, but now I’m getting off topic!
