St Patrick’s Day is fast approaching.  Do you have plans to celebrate?  I’m admittedly well past the years of bar hopping downtown to drink some mediocre green beer in an overcrowded bar…. I tend to opt for a more homebound celebration that involves some good food, maybe a cocktail or 2, and allows me to be in my jammies by 8pm 6pm 😊 This year, we are going to make the following recipes for our St Patrick’s Day dinner: Pot of Gold Mimosa Irish Soda Muffins Guinness Glazed Meatballs Irish Cream Brownies   The Pot of Gold Mimosa is an elevated mimosa to be St Patrick’s Day themed.  This is a cocktail I like to enjoy while making dinner as well as during dinner.  It’s very light and refreshing. St Patrick’s Day is a fun holiday for everyone!  You can usually find some type of celebration around town whether it be a parade, green beer at your favorite bar or specials on Irish food at restaurants.  Even if you aren’t Irish, it’s fun to participate in the festivities. Black Bean Brownies are moist, rich, and fudge-y.  I bet you never thought you would hear “black beans’ and “brownies” in the same sentence 🙂  Most people look at me like I’m crazy and ask if they heard right.  Yes – Black Bean Brownies are a thing and they are delicious!  They are also healthy and easy to make. The recipe can be found here. One thing I want to mention is this recipe can be Vegan, if Vegan chocolate chips are used, and it can also be Gluten Free, if the oats used are Gluten Free. Start by preheating the oven and prepping an 8×8 baking pan with cooking spray. Combine all ingredients in the bowl of a food processor, except for the chocolate chips, and process until smooth.  You might need to turn off the food processor and scrape the sides a few times. Decadent Holiday Treats I have a huge sweet tooth and love to bake.  I often refer to myself as a “Cookie Connoisseur” because that’s how much I love a good cookie.  The holidays are a great time for baking because the options are endless.  And I think people judge the amount of sweets you consume a bit less around the holidays because they also get to enjoy the sugary goodness 😊 Below I have four recipes I think you’ll want to try this year. Memorial Day is to honor the men and women who died while serving in the U.S. Military. Many people celebrate Memorial Day in many different ways. Parades and picnics, barbeques with friends and family, going to the lake, Memorial Day weekend is the unofficial beginning of summer. Nothing brings family and friends together like food so some delicious crowd food and a little menu planning is a must so you can advise your guests what they should bring. Our tradition is to go to the lake for the holiday weekend and preparing as much of the food ahead of time as possible will make packing much more simple than hauling spices and cupboard staples you may not have at the cabin.
