Rosemary, Garlic & Bacon Chicken Burgers are packed with flavor yet light and almost more satisfying than a beef burger.  You use this lovely rosemary and garlic mayo as a spread on the bun and inside the burger making it extra moist and juicy.  I like to top the burgers with arugula, but you could substitute lettuce.  I like the peppery, crunchy texture of arugula and this it pairs well with the flavors of the chicken burger. The recipe can be found here. Start by cooking the bacon according to package instructions.  Transfer to a paper towel lined plate to drain the excess grease and set aside.  The recipe calls for 1 slice of bacon per burger, but you can make more and add as much as you like. Labor Day Grilling It’s time to fire up the grill for your Labor Day celebration!  I plan to spend the day outside enjoying the weather with family and friends.  Whatever you plan to do, I hope you enjoy some delicious food and get good use of your grill before cooler weather hits.  It’s the perfect day for grilling and a picnic. Spring has finally arrived and with the good weather comes lots of outdoor weekend activities and not as much time to cook on the weekends, opening cabins for the summer and yard work leave little time to spend in the kitchen. Burgers are delicious and a simple solution, my favorite is our 1/3 lb. ground beef 85% lean patties, cooked on the grill with a slice of melted cheddar cheese and served on the cheddar onion buns from our bakery. Bubbies bread and butter pickle chips are a staple in our house and add a sweet and crunchy contrast to the burgers. Lucky’s mustards are another condiment that will add extra special touch to your burgers and brats!   We wanted a simple meal for our Friday night dinner that we knew would run late with everyone traveling to the cabin after work and decided that we would do a grilled cheese sandwich celebrating the flavors of summer. The luscious Minnesota grown tomatoes caught our eye and we settled on Caprese Grilled Cheese Sandwiches on sourdough bread. Rather than toasting the bread slices we buttered the outside of the sandwich and placed on a griddle to make them golden brown and layered sliced fresh tomatoes, fresh basil leaves and thick slices of a Mozzarella ball sprinkled with some Kosher salt. We were feeding a crowd so to speed things up we placed the assemble sandwiches on a baking sheet and covered with heavy foil and placed in the oven at 350 degrees to melt the cheese. Time to breakout the bun and enjoy some great burgers. Burgers are an easy dinner solution and so much better when you make them at home! First up is our Guacamole Burger, we think Guacamole is always welcome on the table and we like it chunky with nice large pieces of avocado. This burger is served with bacon slices and we think the easiest way to cook bacon is in the oven. We placed our bacon slices on racks on a baking sheet and baked at 350 degrees until cooked thoroughly. If you’re looking for a ground turkey burger this is our fav – this Pesto Turkey Ciabatta Burger is delicious and you may substitute the ground turkey with ground chicken. Our Juicy Lucy recipe is cheesy and fabulous, we Minnesotans love our Juicy Lucys. We use Tilamook Cheddar a wonderfully rich and tasty cheddar that melts easily.
