Chicken Bacon Ranch Gnocchi is super yummy and the ultimate comfort food!  CBR for short, is another one of my favorite flavor combinations, and when paired with gnocchi?  Even better yet!  The gnocchi are fluffy and pillowy, the chicken is tender and moist, the bacon is salty and crisp, and the burst of ranch brings it together in each bite.  It’s a quick and easy weeknight meal your whole family will love. Pan Fried Chicken with Gravy is such a classic dish.  It’s easy to make, tasty, and doesn’t require a lot of ingredients.  Some might call it a pantry meal because you probably have most ingredients on hand already.  With this recipe, you’ll find tender, juicy chicken that’s topped with a very basic (but very creamy and flavorful) gravy. Chicken Bacon Ranch Noodle Soup is an elevated version of Chicken Noodle Soup.  It’s like Chicken Noodle Soup on steroids 😊 I’m all for anything chicken, bacon, ranch flavored and this soup does not disappoint.  It’s packed with soft noodles, tender chicken, perfectly seasoned ranch broth, and the toppings bring it to a whole new level.  It’s great for a cold winter night or when you are looking for a quick and easy weeknight meal because it doesn’t take long to prepare.  Personally, I’ll be eating this soup year-round.  It’s hearty without being filling, warms you up, is customizable, and makes great leftovers. Lettuce wraps are something I like to make when I want an easy meal, a delicious meal, a nutritious meal, and something light.  Life gets in the way, and you get busy, or you have a long day at work and don’t want to spend a lot of time in the kitchen.  That’s where these lettuce wraps come in!  They are fast to make and taste great – and you only need about 15 minutes to prepare them.  The meat is a lovely combination of sweet and savory, the lettuce adds a nice crunch to each bite and the rice balances everything out.  From what I understand, Korean beef is typically a thin sliced steak, but I’m opting for ground beef (and ground chicken).  It’s cheaper and almost everyone knows how to prepare it so anyone can whip up this meal 😊 I do have 2 variations of the same recipe, one with beef and one with … Continue reading

If you aren’t familiar with Frito Pie, it’s a popular dish in the Midwest and southern states and consists of chili, cheese, and corn chip (aka Fritos).  However, it’s not actually pie but rather a pile of Fritos with chili and other toppings on top.  It’s sometimes served directly from the bag of Fritos (think walking tacos) where the chili and toppings are added to the bag.  Alternatively, you can pour the Fritos in a bowl or on a plate and add your chili and toppings.  It’s comfort food at its finest and is packed with Tex-Mex flavors.  I’ve made both a chicken and beef version and want to share the recipes with you today. I’ve recently been into open faced sandwiches.  I like that you can use any kind of bread and jazz it up with toppings of your choice.  I decided to make Sloppy Joes one night and made 2 different versions, one beef and one chicken.  Andrew ate the beef version and thought it was incredible and I ate the chicken version and thought it was also incredible.  The meat soaked up the sauce making it very flavorful and tender, the cheese on top was perfectly melted and help hold the sandwiches together, and the garlic Texas Toast made for a delightful, crusty base.    It’s a hearty meal that will satisfy any craving. Farro with Chicken and Tomatoes is a one pot meal that is ready in about 30 minutes, making it great for a busy weeknight meal.  It’s warm and comforting without being overly filling so it’s something you can enjoy year-round.  This recipe is essentially a healthy grain bowl that’s packed with protein.  If you aren’t familiar with farro, it’s a bit heavier than quinoa and a bit chewier in my opinion, with a similar texture to rice.  It has a nutty flavor and is a perfect plant-based alternative to meat (if you have dietary restrictions) and is packed with protein and fiber. Ciabatta Melts with Chicken, Bacon & Pepper Jack are delicious sandwiches that are easy to make and are sure to be a hit!  It’s a classic sandwich you could get at your local bistro or café style restaurant, and I thought, why not try making it at home?  It has warm, crusty ciabatta bread that is filled with juicy chicken, crispy bacon, spicy, melted cheese, and tender veggies.  The sandwich tastes light and won’t leave you feeling too full.  You can’t go wrong with a warm sandwich on ciabatta! I was gifted a Cast Iron Balti Dish and immediately started researching recipes and the type of cuisine to prepare in it.  I learned A LOT!  Balti is a cooking method traced back to Southern Asia and is named for the dish in which it is made.  It’s similar to Indian curries and contains meat, vegetables, and spices.  The main difference is how the dish is served but the ingredients used are cooked the same way.  Balti dishes are stir-fried with vegetable oil over high heat in a flat-bottomed wok.  Most often lamb is used, but you can find chicken or pork recipes as well. Chicken Pesto Ciabatta Melts are perfect for your next weeknight meal!  Think of a classic bistro sandwich with warm, toasted bread, tender, juicy chicken, fresh, ripe tomatoes, melted cheese, and an herby pesto to top it off.  That’s what this recipe is, a wonderful hot sandwich option that fills the void for dinner (or lunch).  It’s filling without leaving you uncomfortably full.  The fresh ingredients make it feel like a light sandwich.  I personally think ciabatta is the perfect bread for a sandwich.  It’s soft and airy inside with a crispy crust so you can’t go wrong!
