Brunch is a widely popular weekend activity.  Who doesn’t love meeting up with friends and family to enjoy some wonderful breakfast food and maybe a cocktail or 2?  With spring right around the corner and Easter coming up, I thought it would be fun to share some of my new breakfast recipes, and perhaps get you out of the winter slumber and motivated to host a get-together.  Here are the recipes I’ve been working on: Pepperjack Baked Eggs Pepperjack Baked Eggs Breakfast Sandwich Strawberry Cream Cheese French Toast Bake Sheet Pan Cheesy Hash Browns All are relatively easy to make and taste aaaaaamazing!  I’ll walk you through how to make each recipe and give you some tips along the way. A simple Ham & Gruyere Quiche is sure to please your taste buds so look no further for a quick and easy (yet delicious) breakfast that is perfect for a weekday morning or weekend brunch! If you are unfamiliar with gruyere cheese, it’s a traditional Swiss cheese that is semi-hard and has a rich, creamy, salty, and nutty flavor.  It works well as a substitute for Swiss cheese in recipes but also tastes great on its own with some crackers or bread.  In this quiche recipe, the gruyere cheese pairs well with the tender and salty ham and the soft and creamy eggs. Frittata’s make a great breakfast, brunch or brinner (breakfast for dinner as we call it at our house).  A frittata is an egg-based dish, similar to an omelet or quiche, with your choice of veggies, meat, or cheese inside.  I like to make frittata’s in an Instant Pot because it requires a lot less work – use one pot, set the timer, and go about your day until the timer ends.  The frittata is cooked to perfection with fluffy eggs, tender veggies, and melted cheese.
