Spring has finally arrived and with the good weather comes lots of outdoor weekend activities and not as much time to cook on the weekends, opening cabins for the summer and yard work leave little time to spend in the kitchen. Burgers are delicious and a simple solution, my favorite is our 1/3 lb. ground beef 85% lean patties, cooked on the grill with a slice of melted cheddar cheese and served on the cheddar onion buns from our bakery. Bubbies bread and butter pickle chips are a staple in our house and add a sweet and crunchy contrast to the burgers. Lucky’s mustards are another condiment that will add extra special touch to your burgers and brats! Fall weather calls for us to break out some hardier recipes and this fits the mission with some spicy sausage and delicious gooey cheese. Baked Ziti  Ingredients • 2 Tbsp. Olive Oil • 3 cloves Garlic, minced • 1 whole Large Onion, diced • 2 lb. Italian Sausage • 1 can (28 oz.) Whole Tomatoes, with Juice • 2 cans (14.5 oz.) Tomato Sauce or Marinara Sauce • 2 tsp. Italian Seasoning • 1/2 tsp. Red Pepper Flakes • Salt And Pepper to taste • 1 tub (15 oz.) Whole Milk Ricotta Cheese • 1 to 1 1/2 lb. Mozzarella Cheese, grated • 1/2 cup Grated Parmesan Cheese • 1 whole Egg • 16 oz. The cool and crisp fall weather has arrived much too soon but it’s perfect weather to begin cooking hearty soups and stews with fragrant herbs for your family meals or prepping some chili for a crowd to watch football. This is a classic Minnesota soup made with wild rice made especially easy if you use Rotisserie chicken from our deli, moist and full of flavor our Rotisserie chickens are useful as an ingredient in many recipes (think chicken quesadillas) as well as a main course. We call our recipe Minnesota Wild Rice Soup it has lovely rich flavor and one of my favorite fall recipes. Easy meals are a necessity with a busy family. This recipe for Baked Spaghetti is easy and delicious! Cover and bake at 350 degrees for 1 hour. Uncover and bake another 10 minutes until cheese is brown. Let it rest at least 10 minutes and sit down to enjoy a wonderful meal with your family.

Looking at our weather forecast this week, it seems like we need to serve up some comfort food. In our house that is usually soup or a hotdish! Our Hearty Italian Soup doesn’t take much time but it is rich in flavor, majority of the flavor comes from our fresh Italian sausage; made only at Festival Foods, we prefer the “hot” version of sausage for use in the soup, whatever you do don’t forget the mozzarella for the topping.  Serve the Hearty Italian soup by itself or with a small green salad and a baguette; either way it is an easy dinner to put on the table. Well we might not be invited but there’s no reason we can’t have our own fabulous “Governor’s Ball”. The menu by Wolfgang Puck for the 2013 Governor’s Ball is somewhat intimidating but there is no reason we can’t whip up some pretty fine fare in our own homes to watch the Academy Awards in fine-tasting style with friends. Rather than their shrimp fritters for an appetizer try our recipe for Beer-Battered Coconut Shrimp with a lovely light batter.   These Italian Sliders would really spice up the evening and make quite an impression, made with our very own fresh Italian sausage -made right in the store. Soup and chili feel just right for the change in seasons, a little heartier fare for cooler weather. Two of our absolute favorite soups are our Hearty Italian Sausage and Taco Soup. Try the Taco Soup with slices of avocado and fresh cilantro on top for a real treat.   We think our new Chili recipe is ingenious because it uses our own fresh Italian Sausage as well as ground beef for a rich wonderful chili.
