Well we’re back to that time of year again, Mardi Gras.  Unfortunate timing this year that Mardi Gras and Valentine’s Day are backed up so close together, but we couldn’t resist doing some fun New Orleans recipes for you. First up, let’s get our cocktail game started.  We made our very own Hurricanes.  We simplified some of the more detailed recipes usually found.  All you need is mango passion fruit juice, lemon juice, lime juice, orange juice, white rum and dark rum.  These are strong drinks, fit for anyone ready to party Mardi Gras style! Starting with our appetizers we decided to do scallops with a sweet chili sauce.  A very simple dish, you thaw the scallops and simply dry with paper toweling, sear both sides, then serve with sweet chili sauce. Fun and festive ideas for your very own Mardi Gras Party!  We’re a little North of the big festivities in New Orleans, but we can still have our own fun too!  First we’re kicking off with our new Kickin’ Cajun Dirty Rice recipe from Chef Melanie! You don’t have to go to the French Quarter of New Orleans to celebrate Mardi Gras. Have your own celebration enjoying  creole or cajun cuisine and other food traditions of Mardi Gras. We have King Cakes and Paczkis on Monday and Fat Tuesday and some festive cupcakes to celebrate the event. One staple in our family cupboard has always been Zatarain’s Dirty Rice mix, all you have to do is add water and browned ground beef, a one pot meal to have any time of year. Po’ boys are another Louisiana food that we enjoy. Po’boys are a sandwich that consists of meat or seafood (usually fried) served on a baguette.
