Mardi Gras is Tuesday, March 1st this year.  I believe it always falls on the Tuesday before Ash Wednesday, signifying the end of Carnival season and the start of Lenten season, but please correct me if you are more knowledgeable on these details than I am 😊  Tuesdays aren’t usually something people get excited over, unless it’s Taco Tuesday, but Mardi Gras gives you something to look forward to.  Each city celebrates differently, and I admittedly don’t know of any raging parties happening in the Twin Cities (yet) but that doesn’t mean you can’t celebrate at home with a few close friends and family. Mardi Gras falls on Tuesday, February 25th this year.  Traditionally, the days leading up to Lent, people would binge on rich/fatty foods in anticipation of fasting or limiting intake of certain foods.  Mardi Gras translates to Fat Tuesday and is celebrate the day before Ash Wednesday, making it quite the celebration! New Orleans is famous for its Mardi Gras parties.  I’ve been to New Orleans and enjoyed some awesome food but have never participated in the Mardi Gras festivities…maybe someday I’ll get back!  I want to celebrate Mardi Gras this year with a delicious feast.  I’m thinking traditional New Orleans foods with a little twist!  I’ll be making Muffuletta Dip and Chicken and Sausage Gumbo. Laissez le bon temps rouler!  Aka “let the good times roll” is frequently heard during Mardi Gras.  It’s a celebration of music, parades, costumes, excitement, and most importantly, food.  Typical food styles are Cajun and Creole.  I have a few recipes to help you get into the spirit and feel like you are in the French Quarter of New Orleans. First up is Cajun Chicken Lazone Pasta.  Chicken Lazone is a New Orleans favorite and is a combination of Cajun chicken and comfort food.  You start by coating the chicken in a homemade rub.  It’s pretty simple to make so don’t let this scare you. Well we’re back to that time of year again, Mardi Gras.  Unfortunate timing this year that Mardi Gras and Valentine’s Day are backed up so close together, but we couldn’t resist doing some fun New Orleans recipes for you. First up, let’s get our cocktail game started.  We made our very own Hurricanes.  We simplified some of the more detailed recipes usually found.  All you need is mango passion fruit juice, lemon juice, lime juice, orange juice, white rum and dark rum.  These are strong drinks, fit for anyone ready to party Mardi Gras style! Starting with our appetizers we decided to do scallops with a sweet chili sauce.  A very simple dish, you thaw the scallops and simply dry with paper toweling, sear both sides, then serve with sweet chili sauce.
