Pan Seared Mediterranean Salmon is an easy meal that comes together (from prep-time to completion) in about 30 minutes – perfect for a weeknight meal!  The salmon is pan seared, which gives you a big return on texture and flavor.  The skin is crispy, and the center is tender and moist.  Once you add the accompanying ingredients you have a burst of Mediterranean flavors.  This meal doesn’t take a lot of effort to make but will taste like it came from a restaurant. Start by heating 1 Tbsp of olive oil in a large skillet over medium-high heat.  Season the salmon filet(s) with salt and place in the hot pan, flesh side down (skin side up).  Sear for 4-5 minutes. Oven Baked Cajun Salmon is a great weeknight meal!  It’s a one pan meal that is easy to assemble and will leave you perfectly satisfied.  The salmon is tender and not too filling, and the veggies are roasted to perfection.  The Cajun seasoning gives off a bold, spicy flavor with a slight earthiness.  It’s an all-purpose seasoning that I use on a regular basis. The recipe can be found here. Start by preheating the oven to 425 degrees F.  Line a baking sheet with parchment paper. Himalayan Salt Blocks are a simple and fairly inexpensive way to cook your food.  The non-stick surface sears meat perfectly, the heat is distributed evenly throughout the entire cooking surface, the seasoning is built-in (because it’s a block of salt), and you can chill it to serve chilled food (think charcuterie board, etc.). We like to use our Himalayan Salt Block for grilling.  The thought process here is low and slow, but it’s worth it!  The fun to watch a block of salt cook your food but it also tastes amazing.  The meat absorbs some of the salt while cooking but don’t worry, it’s not saturated with salt…just a subtle hint. Salmon is slowly becoming one of my favorite seafood dishes to make for a weeknight meal.  It’s healthy, fills you up without leaving you feeling “stuffed”, and can be prepared a variety of ways.  I most commonly bake salmon but have also tried my hand at grilling salmon.  The recipe I want to share with you today calls for baked salmon, but only after it’s been marinated and absorbs some lovely flavors. The recipe is for Bourbon Brown Sugar Glazed Salmon.  I’m not a big fan on bourbon in general, and if you aren’t either, don’t let that deter you from trying this dish.  Bourbon is in the marinade, but you can’t taste the alcohol because it’s complemented with other seasonings and spices. Have you ever used a wooden board to grill?  These so called “planks” are wooden board that are soaked in water and set over direct heat on a grill and used as a means of cooking food.  It’s known as plank grilling or planking. Planking is a fun way to grill!  The planks get a slight char to them that creates just a hint of smokey flavor that enhances the food.  I typically buy the cedar plank because I like the taste the plank gives off, and also enjoy the smell.  Cedar planks are the most common, but you can also buy cherry, hickory, maple, and more. Teriyaki Glazed Baked Salmon is the perfect dinner for any night of the week.  It’s flaky, juicy, and packed with flavor.  You will be completely satisfied after this meal!  It comes together fairly quick as well so you can even make this when short on time. The recipe can be found here. Start by making the glaze.  In a small bowl, combine the soy sauce, brown sugar, rice wine vinegar, cornstarch, garlic, and black pepper.  Whisk until the sugar is dissolved. Place the salmon in a large Ziploc bag.  Pour ½ of the sauce mixture into the bag with the salmon, making sure to coat the salmon.  Make sure the Ziploc bag is sealed first! Most Minnesotans are familiar with kabobs because we love to grill when the weather is warm.    However, if you aren’t familiar with kabobs you are in for a treat!  Kabobs are basically cubes of meat, fish, vegetables, fruit, and other foods placed on a skewer and grilled to perfection.  And with the MN State Fair recently ending all I can think of is food on a stick so blogging about kabobs seemed like the perfect fit! Labor Day Grilling It’s time to fire up the grill for your Labor Day celebration!  I plan to spend the day outside enjoying the weather with family and friends.  Whatever you plan to do, I hope you enjoy some delicious food and get good use of your grill before cooler weather hits.  It’s the perfect day for grilling and a picnic. I have a secret to share. Andrew and I both love fish but have never made it at home before. Can you believe it? Well, we were feeling ambitious last night and decided to try making grilled salmon. Turns out it was super simple to make! A friend recommended we use a grilling plank because it gives the fish great flavor so we bought Fire & Flavor Cedar Wood Grilling Planks. You can find these by the meat counter at Festival Foods. They are sold in a pack of 2 and you can use each one about 2-3 times before throwing away so you get a few meals out of them. They are perfect for cooking beef, pork, chicken, salmon, and other seafood so you aren’t limited to any one item. The tricky part is planning ahead.
