Slow Cooker Honey Mustard Pulled Chicken is my new favorite recipe!  It’s a slow cooker recipe so get ready to set it, forget it, and have a yummy meal waiting for you.  I love honey mustard when paired with chicken, chicken tenders specifically, but shredded chicken slathered in a honey mustard sauce isn’t too bad either 😊 The chicken is tender and juicy and is paired with a perfect sweet and tangy sauce.  Serve as a sandwich, on top of a salad, over rice with veggies, on top of mashed potatoes with some steamed veggies, etc.  It can also be enjoyed as is. Slow Cooker Shredded Ranch Chicken is a delicious yet versatile recipe that is perfect for any day of the week!  With only 4 ingredients needed, you’ll be able to whip it up in no time (or whip it up and start your slow cooker, lol).  The taste of the chicken reminds me of Cool Ranch Doritos…it’s a little tangy and zesty.  The chicken is very tender and moist, and the seasoning is a combination of ranch and taco seasoning making is super flavorful.  The chicken can be enjoyed as is or served as a sandwich, on top of a salad, over rice with veggies, in tacos, fajitas, or quesadillas. Cinco de Mayo is coming soon – it’s Friday, May 5th.  Cinco de Mayo quite literally means the 5th of May in Spanish so it’s easy to keep track of the date 😊 If you aren’t familiar, here are 3 fun facts about Cinco de Mayo, 1) it’s not Mexico’s Independence Day, 2) it’s not a national holiday in Mexico, 3) it celebrates Mexico’s victory against Imperial France.  As you can see, it’s a relatively minor holiday that is celebrated regionally in Mexico….and pretty much everywhere in the United States.  In Puebla, Mexico it is celebrated with parades, parties, music, folk dancing, and traditional foods.  In the United States, it’s celebrated with Mexican food.  Are you sensing a theme to my blog post?  I’m going to share fun Mexican fares to enjoy for Cinco de Mayo or anytime you are craving Mexican food. Slow Cooker Chicken Philly Cheesesteak Sandwiches are loaded with tender chicken, bell peppers, and onions, piled high on a hoagie roll and covered in melted cheese.  It’s a tasty meal that’s easy to make!  I think it’s perfect on a cold winter night or on a busy weekend because your slow cooker is doing most of the work. Start by placing the chicken in a slow cooker.  I recommend using boneless skinless chicken breasts but if you prefer to use chicken thighs, make sure to trim some of the fat off first.  Sprinkle with salt, pepper, garlic powder, and paprika.  Season to taste.  I tend to add more garlic powder because we love the flavor. Slow Cooker Loaded Baked Potato Soup is my new favorite soup.  It’s rich, creamy, and loaded with the perfect toppings.  It’s a made from scratch soup but it’s SO SIMPLE, so please keep reading.  It’s hearty, can be a main entrée or served as a side dish/starter, reheats well so it can be enjoyed for lunch throughout the week, and makes a lot.  When I first thought about making a baked potato soup, I thought this is just going to be like eating mashed potatoes.  But it’s not!  It has all the flavors of mashed potatoes but with a different consistency.  It’s yummy and perfect for this time of you. Festival Foods sells these wonderful extra meaty baby back pork ribs.  They are approximately 3lbs per package and have the most tender meat.  I bought 2 packs and cooked them in a slow cooker with different BBQ sauce recipes.  They were phenomenal!  The key is low and low for tender meat.  The meat falls right off the bone and melts in your mouth.  If you like ribs, you must try these recipes! Slow cooker meals are great for any time of year.  Simply set it and forget it and you have a tasty meal that is hearty, filling, and will feed the whole family.  That’s what my recipe for Slow Cooker Shredded Thai Curry Chicken is…. simple but delicious.  The chicken is braised in a coconut-curry mixture and is moist and tender.  The coconut-curry is Thai style with a base of coconut milk, onions, peppers (spicy), sugar (sweet), fish sauce (tangy), and lime juice (citrus)…it’s like a flavor explosion in your mouth.  You then finish the dish with fresh herbs and serve it over a bed of rice. The 4th of July is right around the corner and as things seem to be returning to normal, I’m sure a lot of people are planning a gathering with friends and family to celebrate.  I know we sure are!  The weather is predicted to be beautiful and sunny, and we haven’t entertained in a while, so we are really looking forward to the holiday. Are you ever hosting a party or having a few guests over for dinner but don’t know what to serve?  I always struggle with what to cook because I want my guests to enjoy the meal but also want time to socialize and not be stuck in the kitchen.  Pulled chicken or pulled pork is always a good option.  You can prepare it in the slow cooker so it’s no fuss, it feeds a crowd, and is great to serve for a build-your-own-sandwich bar.  Or you can make it for yourself to enjoy for meals through the week or to freeze for later.
