Sun Dried Tomato & Scallop Pasta is an easy to make yet incredibly delicious weeknight meal.  It’s a recipe that sounds like you ordered if from a local restaurant when in fact you whipped it up in no time at home.  I think scallops pair well with a cream sauce and pasta so it’s the perfect combination.  The pasta is tender and coated in a lovely mozzarella, sun dried tomato sauce.  The scallops have a nice sear and good texture.  And there is good heat from the red pepper flakes. Sun-Dried Tomato Cream Pasta with Shrimp is an Italian inspired seafood pasta recipe.  It’s decadent, easy, and you’ll love it!  I’m always looking for an excuse to use sun dried tomatoes.  I love the sweet yet tart flavor and the chewy texture.  They add some incredible flavor to any dish, especially when you use some of the oil from the jar to sauté other items vs traditional olive oil.  It’s a great combination of tender shrimp, creamy sauce, and sun-dried tomatoes in every bite. Start by bringing a pot of water to a boil.  Cook the noodles according to package instructions.  I like to use fettuccini noodles, but any noodle shape will work just fine.  Reserve ½ cup of the pasta water before draining.  Then drain the noodles and set aside. Creamy Hummus Pasta with Sun Dried Tomatoes is something we tried recently.  We both like pasta and we both like hummus, so why not try them together, right? It’s savory, delicious, and light.  You’ll be satisfied without the heavy feeling of being too full.  The hummus replaces traditional pasta sauce, so you have a creamy and slightly nutty flavored sauce.  The sun dried tomatoes are roasted with garlic so they are tender and give off great flavor.  This recipe is a winner in our house! Let’s get cooking. Chicken Pasta with Sun-Dried Tomatoes  Ingredients • 3 large garlic cloves, minced • 1 jar (4 oz.) sun-dried tomatoes in oil • 1 lb. boneless, skinless chicken breasts cut into 1-inch cubes or larger • kosher salt • paprika • 1 cup heavy whipping cream • 1 cup mozzarella cheese, shredded • 1/4 cup freshly grated Parmesan, plus more for serving with the pasta • 8 oz. penne pasta • 1 Tbsp.
