Muffuletta Sandwiches

Ingredients:
6 Ciabatta Rolls, Cut in Half 1 lb Ham Sliced Thin, Pit Ham 1/2 lb Swiss Cheese, Sliced Thin 1/2 lb Genoa Salami, Sliced Thin 1/2 lb Provolone, Sliced Thin Olive Salad, for Topping (see recipe below)
Slice Ciabatta Rolls in half, then top with slices of ham and a slice of Swiss cheese. Spread on 1 tablespoons of Olive Salad, then a couple of slices of salami, a slice of Provolone cheese and finish with up to 1 Tbsp. of Olive Salad. Place roll top on sandwich. Cut sandwich in half and serve. Olive Salad 1 1/2 cups Green Olives, Pitted 1/2 cup Kalamata Olives (may substitute Black) Pitted 1 tablespoon Capers 3 cloves Fresh Garlic, thinly sliced 1/4 cup Celery, thinly sliced 1 tablespoons Fresh Italian Parsley, finely chopped 1 tablespoons Fresh oregano, or 2 teaspoons dried 1 teaspoon Crushed red pepper flakes 3 tablespoons Red Wine Vinegar 1/4 cup Pimientos 2 tablespoons Green Onions, thinly sliced Freshly Ground Pepper, to taste 1 1/2 cups Extra Virgin Olive Oil
Chop olives in large pieces. Combine all ingredients. Cover with Olive Oil. Put into a bowl or jar, cover and let stand refrigerated for a few days to a week before use.
