Ingredients:
2 1/2 lb cube steak, cut into strips
2 medium white onions, sliced
1 stick butter, divided use
1/2 cup Worcestershire sauce, plus additional
Tabasco
1/2 lb sliced Provolone or Pepperjack cheese
Directions:
Melt 2 tablespoons of butter in a large skillet and add sliced onions, stir together. Cook over medium-low heat, stirring occasionally, until onions are soft and light brown (about 7-10 minutes).
Add 2 tablespoons butter to the same skillet. Turn the heat to high, let the butter begin to brown.
Now add the meat to the hot skillet in a single layer. Do not stir. Fry until meat is browned on one side then flip and cook beef thoroughly. If you do not have an oversized skillet, you could cook and brown in 2 or 3 small batches to get the meat to brown.
Once the meat is cooked, generously add Worcestershire sauce. Start with about 1/2 cup, you may have to add additional later if not enough juice.
Add Tabasco to taste, approximately five or six shakes. Stir to combine. If you like a little heat you will need to double.
Add 2 tablespoons butter to the meat and sauce mixture, stir. Then add the cooked onions with the meat mixture, stir to combine and cover.
Lay the bottom of the roll face-up on a plate. Place a generous layer of meat and onion and spoon a little sauce from the bottom of the pan over the meat.
Add sliced cheese and top with the other side of the roll.
If you have some extra sauce in the pan, you could use a small bowl and serve as a dipping sauce with your sandwiches.
